The Sauvignon Blanc fruit is sourced from selected vineyards strategically sited throughout the Wairau Valley, encompassing the total spectrum of what Sauvignon Blanc has to offer. This in turn gives our winemakers the greatest possible array of aromas and flavours to meld into stunning seamless Marlborough Sauvignon Blanc.
To ensure integrity of the vineyard and to provide the greatest possible blending individual vineyard expression, all the fruit from these vineyards is kept separate throughout the winemaking process.
Once in the winery, the Sauvignon Blanc is gently pressed, cold settled, racked and cool fermented, with selected yeast strains especially chosen to bring out the most of the vineyard's unique aromatics and flavours. With Sauvignon Blanc, it is all about delicate handling to ensure we capture and then retain the remarkable freshness and fruit purity that is the key to Wither Hills Marlborough Sauvignon Blanc.
Winemaker Tasting Note
Intense gooseberry , tomato leaf, fresh cut fennel and red capsicum characters underpinned by the classically pungent melon, guava and passionfruit aromatics, immediately fill the senses. the palate is extraordinarily balanced with bright seamless acidity, concentration of brambly grapefruit, mineral lemongrass flavours and a long supple lingering finish.
A wine with remarkable fruit intensity and style which complements fresh seafood, cured meat and rockmelon, along with Thai inspired salads. Or simply, a fantastic afternoon on the patio with great company and repartee.
